It is important to sustain a healthy balanced diet but when you’re peckish it can be easy to pick up unhealthy snacks! To help keep on tr, why not try this healthy fruit cake? It is suitable for vegans, and does not contain any eggs, sugar or fat!


Ingredients


225g chopped, stoned dates
275ml boiling water
450g mixed fruit
75g wholemeal flour
75g plain white flour
3 tsp baking powder
50g ground almonds
1 tsp mixed spice
4 tbsp orange juice
Flaked almonds for top

Method


Grease and line a 900g (2lb) loaf tin with greaseproof paper or baking parchment
Set the oven at 160C/Gas mark 3
Put dates into a large bowl and pour the boiling water over them
Leave to cool
When cool, mash dates in water and add all the other ingredients except the flaked almonds
Mix thoroughly together and place the mixture into the tin. Scatter flaked almonds over the top
Bake for approximately 75 to 90 minutes until cake is firm to touch and a skewer comes out clean
Leave in tin to cool before removing.
